Super simple, too.
*MIX*
2 blocks of lite cream cheese softened
1c sugar (or stevia)
1/4c brown sugar
*ADD*
Add some vanilla and apple pie spice
4 eggs, one at a time.
*ADD*
1c pumpkin puree (not 'pumpkin pie filling')
Bake at 350 for 50-60m
It'll still be a little wiggly when you take it out.
Cool on the counter for 30-60m
Cool overnight.
